Castro Candaz, one of Raul Perez’s boutique collaborations, is a partnership with Rodrigo Méndez, himself a famous winemaker in Ribeira Sacra. The project focuses on different expressions of the region’s queen red grape, Mencía, grown on Lugo’s granite and slate soils.
The pair use a traditional, low intervention approach thus seeking the maximum expression of the grapes and the land.
This is Castro Candaz more approachable wine, fermented spontaneously and aged for 6 months in large 500-litre used barrels. It preserves the freshness of Mencía’s fruit characters while being elegant and refreshingly mineral. Balanced, vibrant and uncomplicated, with flavours of cranberries, redcurrant, Morello cherries, dried herbs and a hint of smoke.
Simply delicious – a superb, pure expression of the beautiful Mencía.
