There is no oak in this wine to preserve the fruit and freshness without alteration. These wines for us, are alike and akin to top-notch Chablis with their huge, stony minerality.
This wine has aromatics of wet stone, ripped tropical fruits and honeysuckle. On the palate, it reveals layers of crunchy green apples and a solid backbone of salinity. A long racy finish that brings you through the essence of what the best Santorini offers and Assyrtiko is truly about!
