Saint Olive is the first urban winemaking wineries in Lyon, producing hand-crafted wines on-site. They exclusively use local grape varieties such as Chardonnay, Viognier, Gamay, and Syrah. The fruits are carefully selected from seven estates located within an 80-kilometre radius of the winery.
The 812 Gamay is the big sibling of the 480 Gamay, with extended oak ageing for more complexity. The wine is fine and delicate with aromas of forest fruits, white pepper and rose. The palate is fresh, yet complex with savoury notes of typical fruity Gamay (redcurrant, raspberries), it is superbly balanced with silky tannins and acidity that helps cleanse your mouth. It’s round, yet fresh, yet with oak complexity and a beautiful tannic structure on the finish. Not really typical of traditional Beaujolais, it has more to it with everything dialled up a notch!
