The first-ever urban winery in Burgundy & The Rhone

In the culinary capital of France, Lyon, Chai Saint Olive stands as an urban winery between iconic wine regions, Burgundy and Rhone Valley. The journey of Chai Saint Olive began in 2014, when two brothers, Gregoire and Franck, embarked on their winemaking venture, giving life to their first-ever range of wine – Saint Olive Freres. Drawing inspiration from the success stories of urban wineries in global cities like London, Paris, and New York, the vision of Chai Saint Olive took shape. After three years of dedicated effort, the first urban winery in Lyon became a reality in 2020.

Interesting fact: The word “Chai” refers to “winery” in French, where the wine-making process takes place. Beyond its role as a winery, Chai Saint Olive has evolved into a versatile space, serving as a venue for social and business events, where they also host wine workshops and masterclasses!

The passionate duo behind Saint Olive – Gregoire and Franck, drew from their collective expertise in the wine industry and business management sector to establish their own winery.

With 15 years of experience in the wine sector, Gregoire’s knowledge spans all aspects of winemaking and international wine sales through his work in Paris and beyond. Franck complements the team with his marketing, communications, and logistics expertise gained from his background in the associative sector. Together, they embarked on a journey to establish the Saint Olive Freres brand. With the addition of Marie, the cellar master, the team continuously explores and expands its range of wines.

With their pursuit of responsible viticulture, the team has cultivated strong relationships with local producers. Sourcing fruits from 7 esteemed estates, including Jeanne Gaillard, Yves Cuilleron, Ludovic, Emmanuel Courbis, and Eric Rocher in the Rhone Valley, as well as Viviane Tournissoux, Christophe Subrin, and Hubert Cinquin in Beaujolais.

Chai Saint Olive’s winemaking philosophy centres on preserving the primary aromas and fruit freshness.

To achieve this, all blend wines are vinified in thermo-regulated stainless steel vats, resulting in naturally refined wines that showcase their distinctive regional character in every bottle.

At Wanderlust Wine, we are delighted to be the UK’s sole distributor for the Chai Saint Olive’s inaugural series, the Saint Olive Freres range. The white blend is made with classic Rhone varietals, Grenache Gris and Viognier, a fresh, generous and rich white wine. The Rhone red blend and Croze-Hermitage are vibrant and expressive. The former is a blend of Grenache and Syrah, an approachable red offering vibrant fresh berries and adequate tannic structure, a brilliant option as your everyday wine.
