Since 1983, Maison Bruno Paillard has proudly displayed the disgorgement date on every bottle, a pioneering move in the region. Disgorgement marks the beginning of a new evolution in the wine’s life. Over time, the wine transitions through several aromatic stages, moving from fresh fruit to floral tones, then through layers of spice, toast, candied fruit, and finally, rich roasted notes. Each phase adding to its complexity.
This 2009 disgorgement of the Première Cuvée offers a sweetish, floral nose that is intense and expressive, along with prominent notes of orange peel. Despite being disgorged 15 years ago, also indicating significant bottle ageing, the palate remains remarkably lively and fresh, even showing a subtle green streak. The angular acidity is well-balanced by layered notes of spice and roasted nuts, particularly almonds and hazelnuts.
