Picked on 14th October 2025, this Gamay was mostly crushed and de-stemmed with a 10% whole-bunch layer for lift. Fermentation is followed by 10 days of gentle maceration before pressing to stainless steel. Bottled unfined and unfiltered, it’s ultra-light, bright, juicy and joyfully expressive. A playful nod to the Nouveau tradition.
