Located in East Sussex and nestled among 70 acres of rolling hills and woodlands, Tillingham Winery offers stunning views of the Tillingham River valley, stretching to the fortified hilltop town of Rye, the sea, and the Romney salt marshes. Established in 2017, Tillingham has become known for its innovative and progressive approach to winemaking, blending ancient traditions with modern techniques to produce wines with unique characters.

Interesting fact: Tillingham Winery has embraced wine tourism since the start. Visitors are drawn by vineyard tours, an on-site Michelin Green Star restaurant featuring seasonal and local ingredients, the pizza shed under a barn and stylish accommodations, including bell tents for glamping!

Tillingham Winery has quickly gained attention in the English wine scene since the project started in 2018. Known for low-intervention, organic, and biodynamic wines, Tillingham experiments with a wide range of grape varietals, including some lesser-known ones. Despite its relatively recent establishment, Tillingham has already made a significant influence with its unique and varied wine offerings.
Tillingham’s viticulture philosophy can be best described as progressive. The winery integrates scientific and technological knowledge while championing time-honoured farming and winemaking practices at the same time. Committed to sustainable farming, Tillingham employs a diverse, poly-cultural approach to their 21 varietals in the field. These methods aim to restore the soil’s organic matter and enhance microbial and ecological diversity, promoting long-term sustainability and health for the land.
In the cellar, the team stands out for its ability to seamlessly incorporate ancient and modern winemaking techniques, including using Georgian quveri, French oak barrels, foudres and stainless steel tanks during the wine-making process. Native yeasts are used for fermentation, and the addition of inputs is kept to a minimum to preserve the purity of the wine. Salvatore Leone, the new winemaker who joined in 2023, is dedicated to continuing this ethos of experimentation and ensuring that Tillingham’s wines remain distinct and true to their terroir.
All wines are made in small batches. Their wine range is notable for its diversity and emphasis on still wines, which make up 60% of production. Some of the standouts are Endgrain, Chardonnay, Qvevri Artego, Rosé and R (a chilled red)!
