Domaine Roulot is renowned for the chiselled precision of the wines it produces, each expressing the intricate differences between appellations and crus. Jean-Marc Roulot has developed a uniquely elegant style that set a new benchmark for Meursault: mineral and restrained rather that the fat and creamy versions of yore. The vineyards have been farmed organically since 1999, with some experiments in biodynamics. The use of wood is subtle (only 20 to 30% new oak) and use simply to aerate without imparting flavour. The ultimate goal is to let the character of each plot to come through.
All of Roulot’s Meursault sites are on the south side of the village, home to the appelation’s best terroirs. Slightly more northernly and at a slightly lower altitude is Vireuils, a rich yet racy lieu-dit.
The 2014 Vireuils is a stunning Meursault with impressive precision and intricate aromatics. It is linear and pure with lifted acidity and minerality. A slight citrus weighting on the front palate, is followed by grapefruit, white melon and apricot on the mid. Persistent vibrant finish Energetic and vivacious and still has time to age – and all of this from a “village” (not 1er Cru) wine! Superb with shellfish, crisp salad and vinaigrette and a shaved parmesan.
