Saint Olive is the first urban winemaking wineries in Lyon, producing hand-crafted wines on-site. They exclusively use local grape varieties such as Chardonnay, Viognier, Gamay, and Syrah. The fruits are carefully selected from seven estates located within an 80-kilometre radius of the winery.
The organic 812 Chardonnay is a classic, oaked style of Chardonnay from Burgundy. Oak and honey are the dominant flavours in the wine as well as citrus fruits, apple, pear along with subtle creaminess and baking spices. The oak here delivers an extra dimension of toastiness which adds to the richness. A very good example of Chardonnay without the Burgundy appellation price tag.
