Sweet Tokaji is made from leaving the grapes to hang on the vine, collect a good amount of botrytis rot which removes the water and makes the grapes get much sweeter and turn into something that looks like a raisin. The wine is a 3/4 puttonyos level of sweetness. It is silky, rich, juicy, meaningful and complex with apricots and crème brulee being the dominant flavours. The wine is mouth-coating, creamy and rich whilst being polished and classy to a long finish.
It can be drunk as a dessert wine or indeed as an aperitif wine. It pairs nicely with blue cheese, cheese dishes, fresh pears or if you are really pushing the boat out, confit goose liver.
