Since 1983, Maison Bruno Paillard has proudly displayed the disgorgement date on every bottle, a pioneering move in the region. Disgorgement marks the beginning of a new evolution in the wine’s life. Over time, the wine transitions through several aromatic stages, moving from fresh fruit to floral tones, then through layers of spice, toast, candied fruit, and finally, rich roasted notes. Each phase adding to its complexity.
This 2014 disgorgement of the Première Cuvée presents a pale golden hue in the glass. The nose is rich and expressive, with layered aromas of ripe pear, baked apple, honey, cinnamon, and a dusting of cocoa powder, complemented by subtle oxidative notes of hazelnut and marzipan. On the palate, it offers flavours of bruised apple and honey, leading to a refined finish of roasted almond. The texture is silky, with a lengthy finish. An excellent example of the complexity and depth that bottle age imparts!
