In the heart of Germany’s Pfalz region, Weingut von Winning has earned a reputation as a benchmark for dry, site-specific Riesling. As one of the founding members of the VDP (Verband Deutscher Prädikatsweingüter) — the association of Germany’s top wine estates — and a former chair of the organisation in the 1900s, von Winning has long played a key role in shaping the modern identity of German fine wine. With vineyards spanning some of the region’s most respected sites across 50 hectares, the estate combines heritage, terroir, and modern practices to craft wines that reflect their place with clarity and precision.

Interesting fact: A visit to Weingut von Winning is not only about wine but also about gastronomy. The estate is home to The Leopold, a restaurant overlooking the vineyards. Here, regional produce and modern German cuisine are paired thoughtfully with the estate’s wines, particularly its expressive Rieslings. It’s a place where guests can experience how von Winning’s wines translate seamlessly from cellar to table.

Background

The winery traces its roots to 1849 under the name Weingut Dr Deinhard. In 1907, it passed into the hands of Léopold von Winning and eventually reclaimed the “von Winning” name in 2008 (effective in 2009) after a period of change. At its core, von Winning seeks to express the finest sites of Pfalz through Riesling and selected varietals, combining state-of-the-art viticulture with minimal cellar intervention. Their goal is to produce wines of purity, longevity, and an unmistakable sense of place.

Winemaker Stephan Attmann leads the cellar and has brought Burgundian inspirations to the vineyards and the winery, notably planting above-average vine densities to create competition amongst the vines, forcing the roots to reach deeper and improving fruit concentration, as well as adopting single-cane training and using French barrels in the winery.

Vineyard Sites
Von Winning covers around 50 hectares, with 69% planted with Riesling. Their vineyards are located across key locations in Pfalz, including Deidesheim, Forst and Ruppertsberg. Soil types vary widely, from sandstone and limestone to loam and loess. For example, Deidesheimer Kieselberg is a plateau of sand and limestone. The estate favours high vine density (up to 12,500 vines/ha in some blocks) to encourage deeper root growth and lower yields, resulting in grapes with concentration and terroir clarity.

Vineyard Management

The estate works with strong sustainable principles. There is a strict ban on using any herbicides, insecticides or synthetic fertilisers in the vineyards.  While Riesling is dominant, the estate also cultivates Sauvignon Blanc, Chardonnay, Pinot Noir and other varieties such as Syrah, Cabernet Franc, Cabernet Sauvignon etc. Riesling remains the flagship varietal, all are grown across different sites from Neustadt-Haardt to Deidesheim and on to Forst. The estate has a remarkable selection of parcels, including 10 VDP ERSTE LAGE sites (equivalent to 1er Cru) and 12 VDP Grosse Lage (GG) (equivalent to Grand Cru) sites.

In the cellar, von Winning embraces low-intervention techniques including spontaneous fermentation, minimal use of filters and pumps, no clarification and extended lees contact. The facility itself combines historic and modern elements: vaulted cellars, French tonneaux and large formats, and precise storage conditions allow each site-wine to express its identity.
