In Saint Antonin du Var, a small village at the foot of the Alps, Château des Sarrins sprawls across more than a hundred hectares of pine and oak woods and olive groves. Of the 27 hectares dedicated to viticulture, wines are produced under the designations of AOP Cote de Provence and Vin de Pays du Var, with an average elevation of approximately 240 meters above sea level.

Interesting fact: The origins of Château des Sarrins are steeped in history, tracing back to the term “Saracens.” These historical figures once occupied the Massif des Maures, launching raids into the surrounding areas. During one such raid in the 11th century near Draguignan, a Saracen leader was wounded, and as he made his way towards the Massif des Maures, he passed away on the very land that now houses the estate.
Château des Sarrins Wines
Over the centuries, this site evolved from a Saracen tower into a sprawling country estate, where various trades were practised, from olive groves and livestock to silkworm farming and, most notably, vine cultivation. However, as rural populations declined in the late 19th century and again following the First World War, the estate’s size diminished. In 1995, the Paillard family took ownership, infusing new life and dedication into this historical domain.
Situated between the Mediterranean Sea and the Alps, also perched at a certain altitude, the estate boasts a microclimate distinct from typical Mediterranean influences. This unique setting brings a substantial day-to-night temperature swing of 18 to 20°C on average, with summer days often reaching 35°C and nights cooling to 13°C — a valuable asset during harvest season.
The 27 hectares of vineyards are divided into approximately 15 primary sites, each planted with one or several grape varieties to maximize the estate’s terroir potential.
Since 1995, Château des Sarrins exclusively use estate-grown grapes, each grape variety in each plot is vinified separately, allowing for the precise composition of each cuvee. Only the finest portion of the AOC production is retained.
Gravity is the principle of Château des Sarrins’s winery, discreetly integrated into the landscape, half-buried beneath the hillside. This innovative design provides natural insulation and efficient air conditioning. The stainless steel vat room, situated on the lower level, receives the pressed juices via gravity flow. Thermo-regulated vats are individually managed, while the barrels winery, where ageing takes place, benefits from the cellar’s natural coolness. Careful vinification is employed to minimise the use of sulphites. Time is considered indispensable in the creation of exceptional wines, particularly in the extended barrel ageing of reds.
Low residual sugars and moderate alcohol levels are the keys to Château des Sarrins’ signature style. Wanderlust Wine is now offering a variety of wines, including Rose, white, and red.
