Bresolin Wine, a young but passionate family-owned winery, was established in 2012 in Valdobbiadene, Veneto. Though the winery itself is rather new, its connection to viticulture spans generations, starting from Enrico, Matteo and Davide’s grandparents. Their journey began as children in the vineyards of Valdobbiadene, where their grandparents would bring them along to help with various tasks, especially during the harvest.

Interesting fact:The olive trees grown in the hills of Asolo are situated at the northernmost latitude in all of Europe! Because of this northern location, they produce fewer olives per tree compared to regions like Tuscany or Apulia. Just like their vineyards, the olive trees are farmed organically, harvested by hand, and taken to the mill daily. This ensures that the olives are harvested at their optimal ripeness, resulting in high-quality olive oil.

Rediscovering Tradition: Col Fondo
In addition to their traditional Prosecco offerings, the team at Bresolin decided to produce Col Fondo, a wine that harks back to the sparkling wine traditions of the Veneto region.
In the past, before modern techniques were available, Prosecco was bottled with its own yeasts and left to rest in cellars. During this period, refermentation would occur naturally, with residual sugars transforming into delicate bubbles by the yeasts. This process gave the wine its distinctive character, with yeasts settling at the bottom of the bottle, hence the name ‘Col Fondo’ or ‘Sur-lie’, meaning “with the bottom”. Bresolin Wine has revived this ancient method, offering Prosecco just as it was made in the past.
Wine and olive oil form the heart of this family estate. They are dedicated to organic practices in their vineyards and farms, showing deep respect for the land and a commitment to protecting the environment and wildlife.
