Castro Candaz, one of Raul Perez’s boutique collaborations, is a partnership with Rodrigo Méndez, himself a famous winemaker in Ribeira Sacra. The project focuses on different expressions of the region’s queen red grape, Mencía. Here, however, they have a go at Ribeira Sacra’s white Godello, grown on slate soils in the subregion of Quiroga-Bibei. The pair use a traditional, low intervention approach thus seeking the maximum expression of the grapes and the land.
La Vertical is fermented spontaneously and aged, on the lees (dead yeasts), for one year in 225 and 500-litre used barrels. It is then bottled with any fining or filtration. This approach preserves all the texture and aromatic complexity that makes this Godello so distinct and altogether delicious. The nose is generous but focused, with aromas of honey, yellow apple and lemon zest. The palate reveals all these flavours with an enticing salty twist. Because the fruit was harvested early, the acidity is vibrant and gives the wine a refreshing drive.
So vibrant and easy to drink, both on its own or along with fresh cheeses and white meat.
Only 1500 bottles are produced each year.
