Castro Candaz, one of Raul Perez’s boutique collaborations, is a partnership with Rodrigo Méndez, himself a famous winemaker in Ribeira Sacra. The project focuses on different expressions of the region’s queen red grape, Mencía, grown on Lugo’s granite and slate soils.
This is Castro de Candaz flagship wine , made with fruit sourced from the village of La Chantada where the vineyards grow on steep sandy slopes. The wine is fermented in Austrian chestnut wood foudres and then transferred to second-use French oak barrels, where it ages for 12 months.
The nose is dominated by aromas of black chocolate, black pepper and lemon thyme. On the palate it has a marked black fruit, earthy and herbaceous profile. Finely textured and well-structured with superb length.
