Roman Ceremony is a recent project from the Railsback Bros that began as a small effort for a Michelin starred restaurant, though with its success grew to 1000 case production. The grapes are grown on two vineyards suited to Bordeaux varieties with similar soil types of gravel, loam and clay.
This is a must purchase Cabernet; it is made with minimal intervention leading to balance and concentration in an old school style – freshness and finesse without sacrificing richness. The wine has classic notes of black cherry, chocolate, mint and peppercorns through to a long finish with gentle, fine tannins.
