It’s not just Kent & Sussex which can produce outstanding sparkling wines with their soils but Dorset too! Harnessing the method champenoise techniques, this wine showcases some of the best that England can produce. Corallian is the more complex and mineral vineyard of the estate with less fruit but more minerality through the wine which should provide for huge age-ability.
The wine has aromas of cut grass, oyster shell and ripe apple. The palate (even though it is not) feels more akin to a Chardonnay with an integrated citrus acidity and a saline long finish.
