Founded in the 12th century by Cistercian monks, Château de Jau is a historical Roussillon estate where olive trees, cypresses and vine share the land, surrounded by wild garrigue. The growing conditions here are ideal: bright sunshine, complex mineral-rich soils (limestone, clay and schist) and the influence of the Mediterranean winds which temper the summer heat and air the vineyards, ensuring healthy and perfectly ripe grapes.
This is the top white wine of the estate, a blend of their best grapes in the Cotes du Rousillon Villages appellation. Part of the Grenache Blanc is put into oak barrels and then added to the rest of the juice to layer complexity into the wine. The wine itself is pale gold in colour, with a nose of green and citrus fruits and white flowers. In the mouth, it has a full round texture with a backbone of lingering crisp acidity and is fresh and complex at the same time. A long refreshing finish with some slight vanilla notes. Very food versatile, it will go well with salmon, more delicate dishes, salads, pork and chicken dishes and those long English summer BBQs.
