This is the top Champagne from a small house, Brimoncourt. They only produce vintage specific wines in exceptional years with currently their 2009 released. The Chardonnay comes from Avize and Chouilly and the pinot noir from their home town of Ay. 5g of dosage makes the wine an Extra-Brut profile.
The Champagne has a complex, layered profile thanks to ageing on its yeast for 11 years before disgorgement. It has a crystalline texture and smooth, long profile in the mouth with flavours of honeyed lemon, sweet yellow fruits, refreshing menthol, lemon and honey on toast. Thanks to its long ageing profile the acidity is gentle, harmonious and mouth-coatingly long.
